To say I am simply overwhelmed with emotions is an understatement. This week I’ve learned a lot and have been touched by the support and kindness of my fellow foodies and community. Both friends and strangers alike have reached out to show their support of our brand and Healthy On You® spices.
With everything going on I needed a mental health day so I turned on my Healthy On You cooking playlist 🎶 and made these amazing turmeric ginger-spiced grilled chicken skewers. It was so tasty with our Here Comes the Yum spice blend and yogurt in a marinade. As a side dish, I added the same spice blend to the water in my rice and added leftover cooked lentil at the end.😋 It was just what I needed to relax and enjoy a home-cooked meal.
Now that summer is upon us, go ahead and give this tasty recipe a try. It’s perfect for a BBQ if you double or triple the recipe but just as good for a dinner for two…especially in these times!
Makes 4 servings
boneless, skinless chicken thighs, cubed Greek yogurt grilling skewers sea salt and pepper to taste Greek yogurt fresh lemon juice garlic, minced olive oil lemon zest Sea salt and fresh cracked pepper to taste
For the yogurt sauce
boneless, skinless chicken thighs, cubed
sea salt and pepper to taste
fresh lemon juice
Sea salt and fresh cracked pepper to taste
Make the yogurt sauce
In a small bowl, combine all the ingredients and refrigerate until ready to serve with the chicken skewers.
Marinate the chicken
Whisk together the Greek yogurt and the Here Comes the Yum spice blend, season with salt and pepper. Add the cubed chicken to a sealable bag and add the marinade and massage it into the chicken through the bag. Set in the refrigerator for one hour or more.
Grill the chicken
Remove the marinated chicken from the bag and thread onto the skewers. Grill on the stovetop or on a BBQ for 8-10 minutes per side. The chicken is cooked when the juices run clear. Serve with your yogurt sauce and grains of your choice (turmeric rice and lentils pictured here.)
