Join us on Sunday, the 23rd at 3pm PST for our donation-based cooking class! We’ll be whipping up these delicious Za’atar Spiced Eggplant Tacos and a Za’atar Spiced Paloma cocktail. All proceeds will be donated to The King Center in honor of MLK this month. This nonprofit organization is dedicated to educating the greater community on nonviolent social change and building the #BelovedCommunity.

Za’atar Spiced Eggplant Tacos
Za’atar Delight Cocktail
Makes 4 servings
FOR THE AVOCADO CREAM
½ cup Labneh or plain full-fat Greek Yogurt
1 medium avocado, peeled, pitted and roughly chopped
juice of one lime
1 cup cilantro
2 green onions, white and green parts roughly chopped
sea salt and pepper
FOR THE TACOS
8 corn tortillas
1 large eggplant- can be of any kind, roughly 1 lb, diced into 2″ pieces
1 tbsp Healthy On You® While My Za’atar Gently Weeps Middle Eastern Spice Blend
½ tbsp ground sumac spice
1½ tbsp sesame oil
½ tsp sea salt
1 cup cherry tomatoes halved
1 avocado, pitted, peeled and sliced
cilantro and chopped green onion for garnish
½ cup prepared salsa
For the Cocktail:
1 oz. Aquavit
1 oz. Pimms
1 oz. Za’atar syrup (½ cup sugar or honey, ½ cup water, ½ tsp Healthy On You® While My Za’atar Gently Weeps Middle Eastern Spice Blend)
½ oz lemon juice
5 dashes of bitters
honey and more Middle Eastern Spice for the rim garnish
