Tomato & Watermelon Gazpacho & Chili Lime Crab Salad

I first had tomato and watermelon gazpacho while on vacation in Baja and it has stuck with me till now. On hot summer days, its the most amazing light, savory and refreshing dinner when paired with crab salad. Shredded chicken or shrimp is a good substitution if you don’t eat crab.  Both these recipes are tried, true, and deliciously tested in my in-person classes over the years. YUM!

Quarantini: Honey Berry Kombucha Smash
Tomato & Watermelon Gazpacho
Chili Lime Crab Salad

Quarantini Ingredients:
1 cup fresh blueberries
2 tablespoons honey
½ cup fresh raspberries
1 12 oz bottle kombucha (I love ginger or strawberry for this!)
4 ounces ginger beer
Gin or vodka
fresh mint or basil for garnish

Tomato & Watermelon Gazpacho Ingredients:

2½ lbs. heirloom tomatoes (red, yellow is ok)
2 cups roughly chopped watermelon
½ jalapeño, seeded and cut in half
3 Persian cucumbers or 1 hothouse cucumber
2 tsp Healthy On You® Provence You’ve Been Gone spice blend
8 cilantro sprigs, plus cilantro leaves
 for garnish
2 garlic cloves, coarsely chopped
2 tbsp sherry vinegar
 or red wine vinegar
⅓ cup extra-virgin olive oil
3 tbsp diced sweet pepper
s (red, yellow)
3 tbsp diced red onion
1½ tsp Healthy On You® Bohemian Rosemary sea salt
Fresh ground black pepper
Good-quality extra-virgin olive oil, for drizzling

***You really will need a blender or food processor***

Chili-Lime Crab Salad Ingredients:

½ pound lump crabmeat, picked over
1½ Hass avocados, diced (½ inch)
5 tbsp. fresh lime juice
½ tbsp. honey
2½ tbsp. extra-virgin olive oil
2½ tbsp. avocado oil
1 tbsp. very finely chopped jalapeño
½ tsp. minced garlic
ground black pepper
½cup minced red onion
1 tbsp. chopped cilantro, plus cilantro leaves for garnish
1 large heirloom tomato, cut into four ½-inch-thick slices
Healthy On You® Bohemian Rosemary sea salt freshly cracked black pepper

Cancellations up to 5 days before your class start date will qualify for an online credit to be applied to another class. No refunds, credits or class transfers will be issued for cancellations received less than 5 days before your class start date, however, you may always send a friend in your place if you’re unable to attend.
