Summer Watermelon and Tomato Panzanella

This salad screams summer and is bursting with flavor and the goodness of garden-fresh fruit and vegetables. Join this fun class and make this wonderful dish. It can be beautifully paired with salmon, shrimp, tofu, or any protein of choice. I will prepare salmon seasoned with The Fennel Countdown to go along with it.

Cooking in the kitchen together has been a fun routine, especially when we donate to our favorite causes. The charity we will donate to this month is Action Against Hunger. While we are so fortunate to have good, healthy food available to us, so many people are facing famine and food scarcity. I’m glad that we can do our part to help those who are less fortunate.

Aperol Tequila Swizzle Ingredients:

tequila blanco
Aperol
grapefruit bitters
grapefruit Topo Chico
coarse salt

Something to Taco ‘Bout Spice Blend and more coarse sea salt to rim  the glass.

Summer Watermelon & Tomato  Panzanella Ingredients:

FOR THE DRESSING:

1 medium skin-on watermelon, seeds discarded
granulated sugar
2 garlic cloves, peeled and grated
 whole-grain mustard

ground black pepper
Kosher salt
white wine vinegar
cup olive oil

FOR THE SALAD:

day-old ciabatta bread, cut into 1/2-inch cubes ( 2 cups)
 olive oil

2 cups  watermelon, rind discarded cut into 1-inch pieces
2 medium heirloom tomatoes
1 medium seedless cucumber
1 small red onion (about 4 ounces), peeled and sliced (about 1 loose cup)
fresh basil leaves
crumbled feta
sea salt

The cancellation policy enables me to bring you cooking experiences that are small, intimate, and hands-on. Any cancellation up to two weeks prior to your class start date will be refunded 100%. Cancellations up to 5 days before your class start date will qualify for an online credit to be applied to another class. No refunds, credits or class transfers will be issued for cancellations received less than 5 days before your class start date, however, you may always send a friend in your place if you’re unable to attend.
