If you can sauté, you can make paella! Truly, whatever you make may be superior to what many restaurants routinely turn out. It’s best-served buffet style and it does not have to be piping hot.
Note: most classes this year will be donation-based with no set price. Whatever you donate, the proceeds will go to a charity to support social justice causes. We thought this would be a good way to cook while doing something fantastic for communities all over the country. The beneficiary non-profit for this class will be The Loveland Foundation an organization that provides mental health and therapy support for black women and girls in need.

Paella Ingredients:
(no paella pan necessary, just a 12-inch stainless steel skillet)
Serves 4
12 jumbo shrimp in their shells
16 mussels or clams, scrubbed and de-bearded
1 bag frozen seafood mix from Trader Joe’s (shrimp, calamari & scallops (thawed)
4 chicken legs
1 large onion, finely chopped
3 tbsp. olive oil
2 garlic cloves, crushed to a paste or finely chopped
2 tomatoes, peeled and chopped
½ tsp. sugar
frozen green peas
1 red pepper sliced thin
2 tbsp. Healthy On You® Savory Spanish Spice separated
A good pinch of saffron threads
1½ cups medium-grain Spanish paella rice
2 cups fish/seafood stock, plus more if needed
1 cup dry white wine
Quarantini:
1 (750 mL) bottle dry rosé
1/2 cup orange liqueur (grand marnier or cointreau)
2 peaches, sliced
1 lemon, sliced
5–6 strawberries, sliced
1 can or two cups sparkling water (flavored sparkling water ok)
