Healthy Thanksgiving Sides

Savory Roasted Cauliflower Soup, Roasted Delicata Squash & Kale Salad, and Harvest Appletini Cocktail

Additional Information: This is a donation-based class. We typically recommend a minimum donation of $40. Please see the ingredient list below and sign up here.

The recipes and zoom link will be shared with registered individuals on November 11th. The spice blends required for this class can be purchased at the E4E shop or online at healthyonyou.com. Please allow 2-3 days for shipping.

Salad Ingredients:

1 medium-sized delicata squash, halved, seeds removed and sliced into half-moon pieces
1 bunch Italian kale (also called dinosaur or lucinato kale), washed and spines removed extra virgin olive oil
Healthy On You® Spice Spice Baby Spice Blend
2 cups fingerling potatoes, sliced in half lengthwise
6 cloves, garlic, peeled
1 red onion, sliced into eighths
1 tsp sea salt
¼ cup candied walnuts
¼ cup dried cranberries
sea salt and pepper to taste

For the Dressing
1 small shallot, minced
½ cup extra virgin olive oil
¼ cup balsamic vinegar
1 tbsp honey

Soup Ingredients:

1 large head of cauliflower sliced lengthwise through the core into 4 “steaks”
4 tbsp olive oil, separated
tbsp Healthy On You® Here Comes the Yum spice blend, separated
1 large yellow onion, cut into small wedges
4 cloves garlic, crushed
1 large potato, peeled and cubed
1 large carrot peeled and roughly chopped
6 cups vegetable stock
chopped fresh parsley and blanched almond slivers for garnish

For the cocktail:

2 oz Apple Brandy or Apple Whiskey
2 oz Vodka
2 oz water
¼ cup apple cider
1 tbsp fresh lemon juice
2 pieces of apple, thinly sliced
ice cubes

For the rimming sugar:
2 tbsp sugar
1 tsp Healthy On You® Spice Spice Baby Spice Blend
1 lemon wedge

The cancellation policy enables me to bring you cooking experiences that are small, intimate, and hands-on. Any cancellation up to two weeks prior to your class start date will be refunded 100%. Cancellations up to 5 days before your class start date will qualify for an online credit to be applied to another class. No refunds, credits or class transfers will be issued for cancellations received less than 5 days before your class start date, however, you may always send a friend in your place if you’re unable to attend.
