Pomegranate and Fennel Quarantini
Oven Roasted White Fish with Cherry tomatoes

For the Quarantini:
2 cups pomegranate juice (Pom Wonderful is a good choice)
1 small bulb of fennel
sparkling white or rose wine
For the Oven-Roasted White Fish
4 (6-ounce) skin-on mild white fish fillets, such as cod or halibut
1 pint cherry tomatoes, halved
1 large shallot
2 large garlic cloves
1½ tablespoon Healthy On You Fish You Were Here, Fish Lovers Spice
2 teaspoons Healthy On You Provence You’ve Been Gone, Herbes de Provence
1 tablespoon sherry or red wine vinegar
freshly grated lemon zest (from about 1/2 lemon)
fresh basil and mint for garnish
